We roast and blend coffees from various parts
of the world. But some of our coffees come from our family’s
Plantation in India. Giovanni Corbelli’s plantation
in the Salem area of India is 6000 feet up in the mountains
of Salem, and employs most the local villagers to process
the coffee. They process the coffee using the dry method.
This is Simplest of the processes using minimal machinery
. The berries are sorted and cleaned by hand and then passed
through a sieve, this is Known as “winnowing”.
The beans are then laid out in the sun to dry and turned
by hand.

After this The beans are extracted from the
pulp “Hulled” hand sorted and graded. The appearance
of the growing beans have given the style of bean the prefix
of Indian Cherry coffee beans. We only import the highest
quality beans Cherry Arabica, as the name implies it Originated
from Arabia and Cherry robusta, a hardy variety originally
discovered in the Congo near the end of the 19th century.
